Easy-Peasy Banana Bread for Rainy Days

One of my favourite things to do with my kids on a rainy afternoon is bake a simple banana bread. It's easy enough for little hands to help with, makes the whole house smell amazing, and somehow disappears before it's even had a chance to cool down! This recipe has become a firm favourite in our home because it's quick, forgiving, and always delicious.

Yummy Scrummy Banana Bread Ingredients:
All you'll need is the following:
3 ripe bananas
1/3 cup melted butter
1/2 cup sugar
1 egg
1 teaspoon vanilla essence
1 teaspoon bicarbonate of soda
a pinch of salt
1 1/2 cups flour
(If you've got a handful of chocolate chips lying around, even better!)
Start by asking your little helper to mash the bananas in a large bowl. The squishier, the better! Add the melted butter and give it a good stir. Then mix in the sugar, egg and vanilla before adding the bicarbonate of soda, salt and flour. Stir until everything is combined, then fold in the chocolate chips if you're using them.
Pour the mixture into a greased loaf tin and bake at 180°C for about 45 minutes, or until a skewer comes out clean. The hardest part is waiting while it bakes! I often let the kids sit with me in the kitchen drawing as we watch the banana bread rise.
Once it's cooled slightly, slice it up and enjoy with a cup of tea, a glass of milk, or simply on its own. We often sneak a warm slice straight from the tin while it's still steaming. It also makes a great healthier alternative for a school lunchbox (some even swear by having it with low fat cottage cheese).
For me, baking isn't really about the recipe. It's about slowing down, making memories, and spending time together. Some of our best family chats happen while mashing bananas and licking spoons. Those simple moments are often the ones that stay with us the longest
